Sweet & Spicy Wisconsin Jalapeño Cheddar Stuffed Cheeseburgers

I have a lot of theories about life. One of the most important theories revolves around cheese and burgers.
I believe if you are going to eat a cheeseburger, you should really eat a cheeseburger. And in my world, that cheeseburger contains, most importantly, Wisconsin Cheese.
So, in a recent rather contemplative state, I really wanted a cheeseburger. A cheeseburger with Wisconsin Cheese and lots of fixin’s. And this is what I came up with – Sweet & Spicy Wisconsin Jalapeño Cheddar Stuffed Cheeseburgers.
Trust me, this burger is a life theory unto itself.
Sweet & Spicy Wisconsin Jalapeño Cheddar Stuffed Cheeseburgers
Serves 4
16 ounces lean ground beef
1/4 cup sliced green onion
1/4 cup Thai sweet chili sauce*
1/2 teaspoon garlic powder
Salt and pepper
4 ounces (or 4 slices) Wisconsin Jalapeño Cheddar cheese**
4 canned pineapple rings
1/4 cup mayonnaise
2 tablespoons Thai sweet chili sauce
Tabasco sauce, to taste
1 ripe avocado
4 whole wheat buns
*Found in the Asian aisle of most grocery stores
**If you can’t find Wisconsin Jalapeño Cheddar cheese, Wisconsin Pepper Jack cheese is a good substitute
In a medium bowl, mix together ground beef, green onion, sweet chili sauce and seasonings with your hands until well combined.
On a sheet of parchment paper, divide beef mixture and form eight small patties (equal to about the size of a round coaster). On four of the cheeseburger patties, place 1 ounce (or 1 slice) of cheese in the center.
Cover the cheese-topped cheeseburger patties with a second patty, and seal the edges with your fingers so the cheese is completely covered. Over a grill pan or on an outdoor grill, cook the patties to desired doneness. Remove the burgers from the heat and let sit. Then, grill the pineapple rings for 1-2 minutes per side or until each side is slightly charred.
While the burgers and pineapple are grilling, mix together mayo, 2 tablespoons sweet chili sauce and Tabasco sauce in a small bowl.
To serve, spread 1-2 tablespoons of the sweet chili mayo on the bottom of the bun and layer with 1/4 avocado, 1 grilled pineapple ring, one cheese-stuffed burger and the other half of the bun.
Devour.
