Recently, we had the pleasure of chatting with Sara, author of Sprouted Kitchen, A Tastier Take on Whole Foods about the craft of Wisconsin cheesemaking and some of the ways she incorporates Wisconsin Cheese into her healthy recipes – like in her Wisconsin Ricotta & Roasted Pear Tartine.     I love “The Sophia” which is Wisconsin Gruyère Grilled Cheese with Sautéed Swiss Chard & Apples, I have LOVED Gruyere for many years, I call it the “G Cheese” Also my unrelated 2 year old niece is named Sophia, and she loves cheese too!

    I am very partial to Wisconsin Swiss in the fondue with all kinds of fresh crusty bread, thinly sliced steak and all kinds of fresh veggies. I also love the Wisconsin Swiss on just about any sandwich there is.

    I posted the White Fish & Orzo with Wisconsin Feta in Grate.Pair.Share. Issue No. 1: on my FB page and then I posted a photo of the dish inspired from this recipe. Mine was Codfish, Brown Rice with a luscious layer of tasty Wisconsin Parmesan Cheese. Got lots of positive comments from my friends.

    Looking forward to trying the recipe for Wisconsin Ricotta & Roasted Pear Tartine by Sara of Sprouted Kitchen as I have three pears at home that are ripe and need to get used. Although I may try it with cream cheese or a buttery muenster.

    Whole wheat Madison Sourdough crostini topped with braised chard, meyer lemon olive oil, salt, pepper, and shaved Sartori Merlot BellaVitano cheese. Delicious.

    Nothing more delicious than an slice of crusty french bread spread lightly with chive cream cheese, topped with an ultra-thin slice of cucumber, then topped with a sliver of Bellavitano cheese. Add a glass of Riesling and skip dinner.

    I love a classic grilled Wisconsin cheddar on a good whole wheat or rye bread even better when it’s a bread you bake yourself) paired with a hearty homemade tomato or veggie soup topped with a little grated cheddar. It’s a great way to get picky children to eat a well-balanced meal without realizing it, and it’s also something incredibly satisfying to fill you up on a cold day without sacrificing flavor or nutrition.

    For me it’s got to be a quiché, made with Wisconsin Cheddar and provolone. A delicious whole wheat crust with minced onions and broccoli. Accompanied by a mixed green salad, with beets and crumbled Gorgonzola, shaved red onions in a light dressing of rice wine vinegar, a touch of lemon juice and a splash of extra virgin olive oil, salt & pepper. Yum…. Now I’m hungry

    Grilled cheese sandwich made with Wisconsin Swiss cheese and pan grilled in chipotle olive oil. Smooth sweet cheese with a “kick” to warm you inside with homemade soup!

    A Kaukauna Smoky Bacon Cheddar or Parmesan Ranch cheese ball, a box of Flip Sides crackers, and a bottle of Relax Riesling = a little slice of Heaven!

    Healthy? I would have to say cheesy vegetable soup made with low-fat cheddar. But my all rive fave is simply fondue made with any Wisconsin cheese I can get my hand on!!!!

    Some fresh warm cheese curds to the top of a fresh green salad is delish! I also can many of my harvested veggies. Last night I made olive cheese stuffed ravoli with ground turkey and my homemade marinara!
