The “luck of the Irish” is allegedly an ironic phrase, but when focusing on the fare, most will agree: Irish palates and stomachs are quite lucky. With St. Patrick’s Day on the horizon, this week is the perfect time to dish up some Irish-inspired recipes with delicious Wisconsin Cheese.

Irish cream, a perfect coffee or chai tea companion, is surprisingly simple to create at home using this recipe from The Bojon Gourmet. Delicate vanilla and almond flavors sweeten up the Irish whiskey to make a liqueur tasty enough to enjoy on the rocks or neat with a bold Wisconsin Cheddar-Blue Cheese.

Or, if you prefer your drink to feature the distinct flavor of Irish whiskey, a warm drink from Our Lady of Second Helpings containing lemon, honey, and clove will cure any ailments, and pairs perfectly with Wisconsin Blue.

The potato, an important crop in Ireland’s history, is dressed up over at Edible Ireland, where the creamy mashed potatoes combine with kale, milk and butter to create an iconic colcannon recipe. Serve in a steaming bowl topped with Wisconsin Parmesan — your taste buds will adore these spuds.
