Savory Lime Crisps:
1 cup flour
1/2 teaspoon salt
Zest from 1/2 lime
6 tablespoons (3 ounces) cold butter, cut into pieces
2-3 tablespoons ice water
2 avocados, seeded
1 garlic clove, minced
1 small shallot, minced
Salt and pepper, to taste
Juice of 1 lime, or to taste
1/2 cup (2 ounces) Wisconsin Queso Fresco Cheese, crumbled, plus more for garnish
Red pepper flakes for garnish
Preheat oven to 400°F. Line large baking sheet with parchment paper.
In medium bowl, combine flour, salt and zest. Combine the butter with the flour mix using pastry blender or fork until mixture resembles coarse meal. Sprinkle cold water over dry mixture 1 tablespoon at a time, tossing lightly and stirring with fork. Add water each time to driest part of mixture. Dough should be just moist enough to hold together when kneaded gently.
Roll out dough to 1/8-inch thickness. Using a 1 1/2-inch cookie cutter, cut in rounds. Place rounds on prepared baking sheet and bake for 10 minutes or just until turning lightly golden.
Cool on wire rack.
To make guacamole, mash avocado, garlic and shallot together in small bowl. Add salt, pepper and lime juice to taste. Add 1/2 cup Wisconsin Queso Fresco and mix well. Top each round with a spoonful of guacamole and garnish with remaining crumbles of Wisconsin Queso Fresco and red pepper flakes to taste.
